CHARCOAL

If you haven’t noticed before, you will now, every establishment in The Wynwood Yard is portable. What makes CHARCOAL one of a kind is that it’s made entirely out of shipping containers. In the (likely) occasion that Miami sees a great flood in its lifetime, Charcoal will be up and out before Walmart runs out of canned food.

The architecture is simpler than it seems: 5 large shipping containers arranged into an open bar, kitchen, a dining area and a small dining porch, all which surround a courtyard with outdoor seating options. It isn’t until you detail the space carefully that you notice they are actually refurbished shipping containers.

Charcoal’s primitive food menu rotates twice per season and features only local game, seafood, organic produce and herbs sourced directly from the on-site garden. The meat, fish and veggies are all charcoal-grilled in Spanish enclosed grills that reach upwards of 800 degrees F. And as if the constant rotation of the menu wasn’t variety enough, there are 22 housemade condiments to choose from. Every week, Charcoal purchases a full hog or lamb raised in Florida, fabricates them a few blocks away and delivers it daily to the restaurant.

We stopped by Charcoal for a few cocktails and many bites, but stuck around afterwards because the faux Miami winter was too perfect to go back indoors.
