Call me dramatic, but whenever I venture out and try a new restaurant it usually feels like a leap of faith. Despite the homework I’ve likely done in preparation for said meal (consulting with foodie friends, reading reviews online and studying the menu like it’s my job), the outcome is ultimately out of my control.

That’s why you’ve gotta have a little TRUST.

Jerry Flynn, owner of Trust & Co, certainly put more than a little trust into his new venture – a 6,000 square foot restaurant and bar in the heart of Coral Gables.                 

Trust me when I tell you this place checks all of the boxes.

  • Safe spot for a first date? Check.
  • Happy hour with coworkers? Check.
  • Brunch with the girls? Check.
  • Place to watch the game? Check.

Trust & Co is the type of spot I can see myself becoming a regular in no time. While the ambiance is what hooked me, the food is what’s going to keep me coming back for more. 29-year-old Colombian chef Pablo Zitzmann is the mastermind behind the New World American Cuisine you can expect at this new Gables hotspot. Having worked with standout chefs such as Michelle Bernstein and Jean-George Vongerichten, it’s no surprise Zitzmann knows how to serve up some A+ items.
